More than a decade ago Ken began devoting himself to a vegetarian, low-protein diet to help with his kidney disease. He attributes this diet to many extra years of improved health without the need for dialysis. Ken has said, "when you eliminate the toxins fro your diet and eat plenty of healthy, low-protein foods, the body can help itself, even with some difficult conditions like kidney disease."
When it comes to diet, Ken says simpler is better. “Stick with the basics. Shop the perimeter of your grocery store, where you’ll typically find the fresh vegetables and stuff. Avoid highly processed foods, and read the ingredients labels - "if you can’t pronounce it, don’t eat it.”
Ken's own life is proof that a low-protein vegetarian diet is very effective in managing kidney disease and in improving the quality of your life. In addition, sodium and potassium consumption shsould be severely restricted. Most of the calories in Ken's Kidney Disease Diet come from complex carbohydrates such as whole grains, cereals, starchy vegetables, nuts and legumes.
